Ingredients

  • 1 sweet potato, cut into chunks and steamed for 20 minutes
  • 1 banana
  • 2 medium eggs, whisked
  • ¼ cup (62g) smooth peanut butter (for example Meridian, which is 100% nuts)
  • 1 teaspoon ground cinnamon
  • Pinch of nutmeg
  • ¼ cup (37g) sultanas
  • 3 tablespoons oats
  • 1 tablespoon flaxseeds, ground

Instructions

Preheat the oven to 180°C and grease or line a 12-hole muffin tray with cases

In a bowl, mash together the sweet potato and banana

Stir the eggs, peanut butter and spices into the mash until well-combined

Gently fold the sultanas, oats and flaxseed into the mixture

Divide your mixture evenly between the muffin cases

Bake your bites in the oven for 20 minutes, or until golden brown and a knife comes out clean from the centre to show that they are cooked through

Serve once cooled.

You could add finely chopped nuts, chocolate chips, diced dates or any other diced fruit to these bites to make them even tastier for your little one!
