Veggie Pesto Pasta

Veggie Pesto Pasta

Prep Time: 10 mins Cooking Time: 30 minutes

Ingredients

  • ½ courgette, finely diced
  • 1 carrot, finely diced
  • 1 pepper, de-seeded and finely diced (any colour you like)
  • 250g dried pasta shapes — any kind
  • 2 heaped tablespoons green pesto

Instructions

Preheat the oven to 190°C

Scatter the diced vegetables across a baking tray, drizzle with olive oil and cook in the oven for 30 minutes

Whilst the vegetables cook, boil your pasta according to the packet instructions, then drain and reserve

Once the vegetables are cooked, stir them into the cooked pasta and add the 2 tablespoons of green pesto – stir well

Serve once cooled.

Annabelle loved a vegetable pasta dish that she had a nursery last week so I decided to make my own version for her!
