Blueberry and Coconut Mini Loaves

Ingredients

  • ½ cup vegetable oil
  • 2 medium eggs, whisked
  • 1 cup (250ml) thick plain yogurt
  • ½ cup (125ml) honey (maple syrup if baby is under 12 months)
  • 2 cups (250g) plain flour
  • 3 teaspoons baking powder
  • ½ cup (50g) desiccated coconut
  • 1 teaspoon ground cinnamon
  • 1 cup (175g) blueberries

Instructions

Preheat the oven to 180°C and grease or line a 12-hole mini-loaf tray with cases

In a bowl, mix together the oil, eggs, yoghurt and honey (or maple syrup)

In a separate bowl, mix together the dry ingredients (flour, baking powder, coconut and cinnamon)

Gently fold the blueberries through the mixture

Divide the mixture evenly between mini-loaf tins

Bake your loaves for 18-20 minutes, or until golden brown and a knife comes out clean from the centre to show that they are cooked through

7

Serve once cooled.

You can transform these delicious loaves into muffins by simply using a muffin tray instead.
