Ingredients

  • 1 cauliflower (500g), roughly chopped
  • 2½ cups (250g) grated mild cheddar cheese
  • 1 tablespoon grated parmesan cheese
  • ¼ teaspoon mixed herbs
  • 1 large or 2 small eggs, whisked
  • 1 teaspoon minced garlic

Instructions

Preheat the oven to 190°C and grease or line two 12-hole muffins trays with cases

In a food processor, blitz the chopped cauliflower until it becomes the texture of rice

Transfer the cauliflower rice to a large bowl and mix with the cheeses, herbs, egg and garlic

Divide the mixture evenly between the muffin cases - use a spoon to press the mixture down so that it is packed in tightly. Make sure that you fill each case to the top, as they will not rise

Bake your bites in the oven for 45 minutes

Serve once cooled.

Notes

The bites can be stored in the fridge for 3 days and re-heated in the oven or microwave.
