Vegetarian Carrot and Apricot Sausages

Vegetarian Carrot and Apricot Sausages

Prep Time: 20 mins Cooking Time: 5 mins

Ingredients

  • 10 carrots, peeled, roughly diced & cooked until soft (about 10 minutes)
  • 2 slices of stale white bread, blended in a food processor to make breadcrumbs
  • 9 dried apricots, roughly chopped
  • ½ onion, very finely diced
  • 2 teaspoons garlic purée
  • 1 medium egg, whisked
  • 2 tablespoons dried parsley
  • 5 tablespoons plain flour, for dusting
  • 2 teaspoons vegetable oil

Instructions

In a bowl, mash the cooked carrots and then fold in all of the other ingredients, except the oil - stir until well combined

Shape the mixture into sausage shapes

In a frying pan, heat the oil over a low/medium heat and then fry the sausages until they have browned on all sides

Transfer the sausages to a plate lined with kitchen paper to drain any excess oil

Serve once cooled. These are particularly lovely served with some sliced tomatoes, cucumber and a delicious dollop of full fat Greek yoghurt!
