Made with grated courgette, eggs and flour, these savoury fritters cook quickly in a frying pan until lightly golden on the outside and soft in the centre. The texture makes them perfect for babies learning to self-feed, while the mild flavour means they’re usually a big hit with toddlers too.

Ingredients

  • 4 cups (432g) grated courgette (squeeze in a muslin or tea towel to drain excess moisture)
  • 2/3 cup (83g) plain flour
  • 2 large eggs, whisked
  • 1/3 cup (36g) spring onion, sliced
  • 1 tablespoon vegetable oil

Instructions

In a large bowl, mix together the courgette, flour, eggs and spring onion

In a frying pan, heat the oil over a medium heat and then add 3 tablespoons of the mixture per fritter to the pan, pressing lightly to form a round - you should fit 2 or 3 fritters into the pan, depending on its size. Cook each fritter for 2-3 minutes on each side

Once each fritter is cooked, transfer onto a plate lined with kitchen paper to absorb any excess oil

Serve once cooled.

Notes

Freezing and re-heating advice:
Let the food cool fully, then place on a baking tray flat in the freezer for up to an hour. Then you can put them into an airtight container or freezer bags, this will stop them sticking together. They will keep in the freezer for up to 3 months. Remove as many from the freezer as you need and defrost fully at room temp or overnight in the fridge. Place the food back into a frying pan on a low heat, or on a baking tray in the oven at a low temp. Heat until piping hot throughout.

How To Serve for 6-7 months: Slice into finger width pieces and offer one slice at a time
How To Serve for 8-9 months+: Cut into smaller bite sized pieces for older babies to help develop or master pincer grip.
