This is a really quick and easy lunch when you’re short of time! The sweetness of the apple with the saltiness of the cheese works wonderfully. Annabelle and I share this lunch on a regular basis – especially on a Monday, after a mad dash to get home after her swimming lesson!
Cheese and Apple Quesadillas
- 50g mild cheese, grated
- 1 apple, peeled, cored and grated
- 4 flour tortillas
Sprinkle the grated cheese and apple evenly between two of the tortillas
Place the remaining two tortillas on top and press down to sandwich the cheese and apple together
In a frying pan, dry-fry the tortillas over a medium for 2 minutes on each side, or until slightly brown and the cheese melted
Serve once cooled.
You could also add sultanas for added texture.
