Oink Rolls with Wedges

Deliciously Crispy Oink Rolls: A Baby-Led Weaning Twist on Sausage Rolls with Mini Tortilla Wraps! Try my easy recipe featuring savoury sausage meat, finely diced red onion, and garlic. Rolled in mini tortilla wraps, brushed with egg wash, and baked to golden perfection. Served with crispy potato wedges. A baby-friendly delight for the whole family!

Ingredients

  • 2 teaspoons of vegetable oil
  • 1/2 red onion, very finely diced
  • 1 teaspoon of minced garlic
  • 400g of sausage meat
  • 8 mini tortilla wraps
  • 1 egg, whisked
  • 2 large baking potatoes, sliced into wedges

Instructions

Pre-heat the oven to 200°C and line two large baking trays

Heat 1 teaspoon of oil in a small frying pan over a medium heat, add the red onion and fry for 4 minutes, until soft

Add the garlic and stir it through for 1 minute, then transfer the garlic and onion mixture to a mixing bowl

Add the sausage meat to the bowl and combine the ingredients well. You may need to go in with your hands

Take 2 heaped tablespoons of the mix at a time, roll it into thick sausages and place them into the centre of the mini tortilla wraps

Bring the left and right sides of the tortilla wraps over the sausage meat, then fold over the top and bottom sides so the sausage meat is concealed and you have a neat parcel

Place the parcels onto a prepared baking tray (fold side down) so they can’t unravel itself

Brush the rolls with egg wash - reserve

Spread the potato wedges over the second baking evenly and drizzle with the remaining oil

Place both the Oink Rolls and wedges into the oven to bake for 30-35 minutes until golden and crispy

Serve and enjoy once cooled.

Notes

Freezing and re-heating advice: I find pastry- based recipes are best frozen raw. Construct the recipe, then place on a baking tray flat in the freezer for up to an hour. Then you can put them into an airtight container or freezer bags, this will stop them sticking together. They will keep in the freezer for up to 3 months. Remove as many from the freezer as you need and defrost fully at room temp or overnight in the fridge. Then follow the cooking instructions in the recipe as normal. You cannot refreeze something that has been frozen, so only defrost what you plan to cook straight away. Please follow NHS guidance on safe preparation and storage of food.
