Fruity French Toast Rolls

Fruity French Toast Rolls

Prep Time: 5 mins Cooking Time: 5 mins

  • 1 slice of white bread, crusts removed
  • 2 tablespoons cream cheese, or yoghurt
  • 1 strawberry (or any fruit), diced into very small chunks
  • 1 medium egg, whisked
  • 1 tablespoon coconut oil

Use a rolling pin to roll the slice of bread thinly to a 2mm thickness

Spread the cream cheese, or yoghurt, evenly over the bread and place the diced fruit along one end

Roll the bread slice to achieve a tube shape and then soak it in the whisked egg for 2 minutes on each side

In a frying pan, heat the oil over a medium heat and then fry the roll for approximately 5 minutes, turning often until each side is golden

Serve once cooled.

These delicious French toast rolls are very easy for young babies to handle. I only had sourdough bread in the house when I made these to photograph, but I honestly think that normal plain white bread is a lot easier to create these with and achieves a better result. You can slice the rolls into 1-2cm rounds to make them more interesting for older babies
