Ingredients

  • 1 x 400g tin of chickpeas, drained and rinsed
  • 1 x 200g tub of garlic and herb cream cheese
  • 1/2 cup (62g) of grated cheddar cheese
  • 2 handfuls of fresh spinach
  • 1 x 320g sheet of ready-rolled puff pastry

Instructions

Preheat the oven to 180°C and line a baking tray with baking paper

Place the chickpeas, cream cheese, cheese and spinach into a food processor and blend to form a hummus consistency

Unroll the puff pastry sheet and spread it evenly with the chickpea 'hummus’

Re-roll the pastry sheet horizontally

Use a sharp knife to cut the pinwheels every 2cm

Place the pinwheels onto the baking tray

Bake the pinwheels in the oven for 20-25 minutes, until golden brown

Serve once cooled.

Notes

Freezing and re-heating advice:
Let the food cool fully, slice and then place on a baking tray flat in the freezer for up to an hour. Then you can put them into an airtight container or freezer bags, this will stop them sticking together. They will keep in the freezer for up to 3 months. Remove as many from the freezer as you need and defrost fully at room temp or overnight in the fridge. Sprinkle with a little water and place the food on a baking tray in the oven at a low temp, or in the microwave. Heat until piping hot throughout, or serve at room temp.

How To Serve for 6-7 months: Slice into finger width pieces and offer one slice at a time.
How To Serve for 8-9 months+: Cut the slice in half or quarters depending on appetite. Cut into smaller bite sized pieces for older babies to help develop or master pincer grip.
