Ingredients
- 1 small sweet potato, peeled and diced into 1” chunks
- 1 medium banana, mashed
- 1 medium egg
- 1/2 cup (60g) of plain flour
- 1 knob of unsalted butter or splash of oil
Instructions
Steam the sweet potato for 12-15 minutes (or boil for 10-12 minutes), until tender
Add the sweet potato and banana to a bowl and mash together until smooth
Crack in the egg and stir until fully combined
Add the flour and mix to form a thick, scoopable batter
Heat the butter in a frying pan over medium-low heat
Add 2 tablespoons of batter to the pan to form each pancake; you should be able to fit 2-3 pancakes in the frying pan at any one time
Fry each pancake for 2-3 minutes until bubbles form, and then flip and cook the underside for a further 1-2 minutes
Place the pancakes onto a plate covered in foil to keep them warm until all of the pancakes are prepared
Serve and enjoy once cooled.

Freezing and re-heating advice:
Let the food cool fully, then place on a baking tray flat in the freezer for up to an hour. Then you can put them into an airtight container or freezer bags, this will stop them sticking together.
They will keep in the freezer for up to 3 months.
Remove as many from the freezer as you need and defrost fully at room temp or overnight in the fridge. Place the food back into a frying pan on a low heat, or on a baking tray in the oven at a low temp. Heat until piping hot throughout.

How To Serve for 6-7 months: Slice into finger width pieces and offer one slice at a time
How To Serve for 8-9 months+: Cut into smaller bite sized pieces for older babies to help develop or master pincer grip.
