I have been asked by many mums recently to start creating some fish recipe ideas. Although I am not a massive fish lover, there’s some fish that I really enjoy and tuna is at the top of the list!

Tuna Fishcakes

Tuna Fishcakes
Ingredients
- 100g mashed potato
- 1 tin of tuna in oil, drained
- 1 cup (175g) sweetcorn
- 1 spring onion, finely sliced
- 2 tablespoons fresh chives, finely diced
- 1 medium egg, whisked
- ¼ teaspoon ground black pepper
- 2 cups (120g) breadcrumbs
- ½ cup (62g) plain flour
- 1 tablespoon olive oil

Prepare your mashed potato and allow it to cool

In a large bowl, mix together the cooled mash, tuna, sweetcorn, spring onion, chives, egg and pepper – then add ½ cup (30g) of the breadcrumbs and the flour

Use your hands to shape the mixture into 9 fishcakes. Coat them well in the remaining breadcrumbs

In a large frying pan, heat the oil over a medium heat and then fry each fish cake for 2 minutes on each side, until golden brown

Serve once cooled, but still nice and warm.
