Cranberry, Bacon and Cheese Rolls

Prep Time: 10 mins Cooking Time: 25 mins

Ingredients

  • 4 rashers of bacon or low salt ham
  • ½ cup (50g) cranberry sauce
  • Ready-rolled puff pastry sheet
  • 1 cup (125g) grated mild cheese

Instructions

Grill the bacon under a medium heat until it is cooked through, then set aside to cool

Preheat the oven to 200°C and line a baking tray with baking paper

Roll out the puff-pastry sheet and spread the cranberry sauce evenly across it

Once the bacon has cooled, chop it into approximately 2cm chunks and scatter it over the cranberry sauce — top with the grated cheese

Roll the pastry sheet lengthways and cut it into individual rolls of 2.5cm thickness

Place your rolls onto the baking tray, leaving space for them to expand as they cook

Bake your rolls for 15-25 mins, checking often. You will know the rolls are cooked when the pastry is golden and the cheese melts from the sides slightly

Serve once cooled.
