Christmas Bark

Christmas Bark

Prep Time: 5 mins Cooking Time: 0 mins


  • 500g full fat Greek or plain yoghurt
  • 1 teaspoons vanilla bean paste or extract
  • A handful of fresh cranberries, halved
  • Christmas sprinkle decorations



Place cranberries on a baking tray and roast at 180 degrees C for 15 mins, allow to cool completely


In a small bowl mix together yoghurt and vanilla bean paste or extract


Spread the mixture into the bottom of a 9x13" tray that has been covered with tin foil


Add cranberries so they are red side up and then scatter over Christmas decorations


Freeze for at least 2 hours


Remove from freezer, and cut into about 12 slices. Serve immediately, or keep in freezer in a freeze-safe bag or container for up to 30 days.

Sadly my plan was to create snowman bark but that didn’t quite go to plan, and anyway us mums don’t have the time for super fiddly creations anyway.. I hope you still enjoy this ever so slightly generic ‘Christmas Bark’ 😉
