- 1 chicken breast, cut into 2 inch pieces
- ½ onion, diced
- ¾ cup (139g) cooked quinoa, room temperature
- ½ teaspoon dried rosemary
- 3 tablespoons chunky apple sauce (homemade or shop brought)
- 3 tablespoons olive oil
In a food processor, blend the chicken and onions until a course purée has been formed
Transfer the purée to a large bowl - stir in the quinoa, rosemary and apple sauce
Form the mixture into 10 2-inch burgers that are ½ inch thick
In a frying pan, heat the oil over a medium-low heat and then cook the burgers in batches for 4 minutes on each side – ensure that they are cooked through before removing from the heat
Serve once cooled with warm pitta bread and slices of cucumber and cooked carrot.
I can’t think of anything more delicious than a burger sweetened with apple! I often struggle to get Annabelle to eat chicken, it’s just one of those foods that she’s never really found very exciting, but when mixed or topped with ingredients that intensify its flavour, she will go in all guns blazing!
You can easily double this recipe so that you can batch freeze for an easy meal on a busy day!
