Aubergine Tray Bake Stack

Prep Time: 10 mins Cooking Time: 40 mins

Ingredients

  • 2 aubergines, cut into 5cm rounds
  • 1 tablespoon olive oil
  • 1 cup (125g) grated mild cheddar cheese
  • 500ml passata

Instructions

Preheat the oven to 200°C

Place the aubergine rounds onto a baking tray, drizzle with oil and bake for 15 minutes

Now layer the 3/4 slices of aubergine on top of each other with 2 TBSP of passata and sprinkling of cheese between each layer finishing with a generous lashing of passata and yummy cheese on top

Continue to create layered stacks in this manner, until you have 3 or 4 stacks and no slices of aubergine left

Bake your stacks in the oven for a further 25 minutes, or until the cheese has melted and begun to turn golden brown

Serve once cooled.

This is another really simple meal inspired by Sarah Wilson. Don’t worry if you don’t get the perfect stack or if your stack topples – baby will no doubt tear it apart within seconds anyway!
