In a bid to be healthier and of course pack as many veggies into Annabelle’s diet as possible I am trying to switch carbs for veggies – Annabelle and I have enjoyed carrot fries with lots of meals recently but for a change I decided to try parsnip fries and I’m glad I did because they are delicious and most importantly they went down well with Annabelle too. My Recipe

Prep Time: 5 mins
Cook Time: 40 mins
Yields: 3-4

Crispy Parsnip Chips

  • 5 parsnips, peeled and cut into skinny fries
  • Olive oil for drizzling
  • 1 TBSP dried rosemary
  • 1 TBSP dried oregano

Method

  1. Heat oven to 180Β°C
  2. Simply place parsnips on a roasting tray, drizzle with olive oil and sprinkle with herbs
  3. Place in the oven for 30-40 minutes until soft on the inside and slighly golden and crisp on the outside
