Christmas Bark

Sadly my plan was to create snowman bark but that didn’t quite go to plan, and anyway us mums don’t have the time for super fiddly creations anyway.. I hope you still enjoy this ever so slightly generic ‘Christmas Bark’ πŸ˜‰

  • 500g full fat Greek or plain yoghurt
  • 1 teaspoons vanilla bean paste or extract
  • A handful of fresh cranberries, halved
  • Christmas sprinkle decorations


  1. Place cranberries on a baking tray and roast at 180 degrees C for 15 mins, allow to cool completely
  2. In a small bowl mix together yoghurt and vanilla bean paste or extract
  3. Spread the mixture into the bottom of a 9x13" tray that has been covered with tin foil
  4. Add cranberries so they are red side up and then scatter over Christmas decorations
  5. Freeze for at least 2 hours
  6. Remove from freezer, and cut into about 12 slices. Serve immediately, or keep in freezer in a freeze-safe bag or container for up to 30 days.
