Cheese and Apple Quesadillas
This is a really quick and easy lunch when you’re short of time! The sweetness of the apple with the saltiness of the cheese works wonderfully. Annabelle and I share this lunch on a regular basis – especially on a Monday, after a mad dash to get home after her swimming lesson!
Ingredients
- 50g mild cheese, grated
- 1 apple, peeled, cored and grated
- 4 flour tortillas
Method
- Sprinkle the grated cheese and apple evenly between two of the tortillas
- Place the remaining two tortillas on top and press down to sandwich the cheese and apple together
- In a frying pan, dry-fry the tortillas over a medium for 2 minutes on each side, or until slightly brown and the cheese melted
- Serve once cooled.
You could also add sultanas for added texture.
